Interesting topic. I have done track days on some "Not a Track Bikes" and if your not competing, and stay within reasonable perameters
I have a KTM690Duke that I had not intended for track use, but a few months ago, I was given 2 days at Laguna Seca, and rather than scramble around trying to borrow a "track" bike, I just got a cheap belly pan, safety wired the necessary stuff, duct taped it in the usual spots, rented a panel van and drove to Monterey.
It was great, a little pogo-ish on one corner exit due to the poorly damped forks, but my times were not bad, not as good as they were 20 years ago on my 916, but respectable.
I think the issue with clearance could be managed by a bit more "hanging off" and avoiding really extreme lean. Maybe some knee pucks velcroed to the valve covers?
Of course, ideally you should keep a nice Ducati 916 around for such things...
